Introduction

I was craving southwest salad but didn't want to spend the time making it, so I used a cup of Alexia Chipotle Roasted Sweet Potatoes & Vegetables. This is so tasty and so good and not to mention low in calories!! Ingredients

    1 Cup of Alexia Chipotle Roasted Sweet Potatos & Vegetables (Cook according to directions)
    3 oz cooked chicken - shredded or diced up
    1.5 cups shredded romaine lettuce
    1 small tomato diced
    2 tortilla chips - crumbles to sprinkle on top
    2Tbsp of Spicy Chipotle Aiolo Sauce(directions below)











    Spicy Chipotle Aiolo Sauce
    Ingredients

    3 tablespoons fat free mayonnaise
    3 tablespoons of non fat plain Greek Yogurt
    2 teaspoons chopped chipotle chiles in adobo
    1 teaspoon minced garlic
    1/2 teaspoon cumin
    4 teaspoons fresh lime juice
    sea salt & freshly ground black pepper, to taste

    Put all ingredients in a blender and blend until smooth.

    Transfer to a bowl or squeeze bottle, and refrigerate until needed.

    Serving Size: 3/4 cup or 12 Tbsp.

Directions

Cook Alexia Chipotle Roasted Sweet potatoes & Veggies according to direction. You can the left overs for lunch or in a tortilla shell!

On a large plate, add your lettuce, top with cooked veggies, tomato & then chicken, Aiolo Sauce and crumble two tortilla chips on top.
