Ingredients


    Egg, fresh, 2 large, beaten
    Canola Oil, 2 tbsp
    Chicken Breast, no skin, 2, cut into small squares
    Bamboo shoots, cooked, 0.50 cup (1/2" slices)
    Onions, raw, 0.25 cup, chopped
    Water chestnuts, 0.50 cup slices
    Brown Rice, long grain, cooked, 2.50 cup
    Kikkoman Lite Soy Sauce, 3 tbsp
    Sunbird Hot and Spicy Fried Rice seasoning mix
    water, 1/4 cup
    Chopped green onion

Tips

The cooked rice should be cold; roll it in your palms to separate. Uncle Bens ready rice works very well; just use it right out of the package.

The Serving Size: 3 servings


Directions

Saute the vegetables and chicken in a large non-stick wok or skillet in the oil until the chicken is cooked. Spread them to the sides of the wok or pan and add the egg; cook until done. Add the water, soy sauce and seasoning mix, stir, then add the rice and cook, stirring, until heated all the way through. Serve topped with chopped green onion.
