Ingredients

    1 Egg
    2 Tablespoons melted butter
    8 oz lump crabmeat
    1/2 teaspoon mustard
    1 Tablespoon Tarragon
    1 Tablespoon Basil
    3 Tablespoons Mayonnaise
    1 Tablespoon Old Bay seasoning
    2 Tablespoons fresh lemon juice
    1/2 teaspoon lemon zest
2 Tablespoons Kraft grated parmesan cheese
1/2 cup of panko bread cruumbs

Directions

Set your oven thermostat on Broil

Spray with Pam or rub butter in a shallow broiler pan and set aside.

Whisk the egg and butter is a small bowl and set aside.

Combine the tarragon, parmesan cheese, basil and old bay seasoning in a small bowl and set aside.

In a large bowl, add mayo, mustard, lemon juice, lemon zest, egg and butter mix and spices (tarragon, parmesan cheese, basil, old bay seasoning).

Mix ingredients very well with a spoon.

Use your fingers to gently add the lump crabmeat to the mixture. Try not to break up the crabmeat . The crabmeat should appear lumped together. Try not to shred or break up the crabmeat.

Begin separating the mixture into small cakes with your hands. Add panko breadcrumbs gradually to each cake. Use the panko breadcrumbs sparingly or only when necessary to hold the cake together. Place the crabcakes in the broiler pan, and broil for 8-10 minutes.
