Introduction

This is easy to make with what you have in the cupboard and very delicious

The sugar overcomes the bitterness of canned tomatoes, you could use stevia etc. You could also substitute the light cream for low fat evaporated milk, but be careful not to boil

Passata is a finely blended tomato sauce, if you can't find it in the stores replace it with another 2 cans of tomatoes.

Ingredients

    Passata, 24oz (700 gram/ml) bottle
    Stewed Tomatoes, Canned, No salt, 2 1/2 Cups
    Olive Oil, 1 tblspn
    Tomato Paste, 2 tblspn
    Chicken stock, home-prepared, 3 cups
    Garlic powder, 1/2 tsp
    Carrots, raw, 2 medium, chopped finely
    Onions, raw, 2 medium, chopped finely
    Granulated Sugar, 1 tblspn
    Light Cream (coffee cream or table cream), 1/3 cup
    Pepper, black, 1 tsp

Directions

In a pot cook the onion and carrot in the olive oil for @ 5 minutes. Add all other ingredients except the cream and simmer for @ 15 minutes. Blend with a stick blender and strain through a sieve (you can leave it if you don't want it strained) add the cream and serve.

Serving Size: approximately 8 serves of 3/4 cup
