Introduction

Number of Servings: 6

Ingredients

    5 or so baby carrots
    1/2 a large tomato, peeled
    1/2 a celery stalk
    clove of garlic
    1/4 C cooked black beans
    very small yellow onion, maybe .25 C chopped

    4 C water
    1/2 C red or french lentils (available at WinCo and Good Earth)
    1/3 C regular lentils
    2 t beef bouillon granules
    crack of pepper, dash of salt if wanted

Directions

In a 4 C capacity food processor, puree the carrots, tomato, celery, garlic, black beans and yellow onion. Add the pureed mixture to 4 C water in a pot and stir. Bring to a boil.

Add the lentils, bouillon granules and cracked pepper. Stir and return to a boil. Turn heat down to low and simmer, covered, for 45 minutes.

Delish!!! Makes 6 one-cup servings.
