Introduction
This is my mom's recipe. It has very simple ingredients and is easy to make. Sometimes I make it a day ahead of time to reheat on the stove for optimum flavor. This is my mom's recipe. Ingredients

2lb lean ground beef
1 large yellow onion chopped
1 15oz can tomato sauce
1 15oz can diced tomatoes
1 28oz can crushed tomatoes
3 15oz cans of red kidney beans (or one huge can) DRAINED
1 small can diced green chilis
1 tbsp olive oil
1/4 cup chili powder
Directions
Heat olive oil in a large stock pot or stew pot to medium and cook chopped onion until soft. Add the ground beef and brown throughly. Drain off the excess fat/oil.
Add to the pot all the cans of tomatoes, beans (drained), and green chilies. Then add the chili powder.
Stir well and let simmer covered (it gets bubbly and will splatter) on low heat for about one hour, stirring periodically.
Optionally serve with shredded cheese and sour cream on top.
Serving Size: Makes 8 servings
