Introduction

This is a garden soup made with fresh garden ingredients whenever possible. This is a garden soup made with fresh garden ingredients whenever possible.
Number of Servings: 5

Ingredients

    The yields of one ear of corn
    six roma tomatoes
    two collard leaves (large) chopped
    1/4 medium onion or about 1/2 cup
    1 cup fresh cilantro coursely chopped
    3 cloves garlic
    2+ Tbsp chili powder
    salt to taste (1 tsp)
    hot chili to taste or a few tbsp hot sauce of choice
    2 tbsp oil (neutral oils like canola are best)
    water (3 cups)

Directions

chop all raw ingredients (cut back on prep time with food processor)
heat water with 1/2 the oil
heat other 1/2 the oil in skillet, saute onion and garlic
add a little water to skillet to finish the saute and transfer onion/garlic to pot
add all the rest of the ingredients to water
simmer until veggies are tender.
