Number of Servings: 16


    4 chicken breasts, boneless skinless
    1 can of black beans
    2 cups pinto beans ( I used leftovers)
    1 can shoepeg corn (white) or mexican corn works
    1 jar (16 oz) of homemade salsa or 2 cups of bought
    1 pound of mozzerella cheese
    2 cups of fiesta blend cheese (great value is fine)
    1 tbsp Tony Chachere's Seasoning
    2 tsp of seasoned pepper
    1 tbsp garlic powder or more


put chicken in a sprayed crockpot, season chicken with all seasonings listed.
Dump all beans, corn, and salsa on top of chicken

Cook it 6-8 hours on low

about 20 min. before serving
Put cheese on top, replace cover to allow to melt.

great served with corn muffins or corn chips and sour cream
