Introduction

SUPER simple and tasty recipe that tastes delicious and is ready in under 15 minutes. Dump ingredients together, mix, form soft patties, and cook in very lightly oiled skillet. Non-stick skillets require no olive oil, but hey--it's good for ya! I like using lemon-pepper rather than plain black pepper. Sometimes I add a bit of ground tortilla chips in place of crackers, as some use due to being allergic to wheat, not just gluten. 1-2 chips ground up is enough, and none is how we eat it. Ingredients

    Tuna, egg (or substitute), parsley (fresh is tastiest), minced onion, minced celery, shredded carrot, salt and pepper to taste

Directions

Shred a bit of fresh carrot, mince a bit of onion and fresh parsley, then combine all ingredients together and form loose patties.
I cook them in my skillet with a light coating of olive oil, but non-stick skillets work great, too.
Fresh lemon juice squeezed on them at serving is good.
I serve this with a side of steamed vegetables.
