Ingredients

    1 whole 8# chicken cooked,skinned, boned and shredded
    2 8 oz packages of cream cheese softened
    2 med onions diced fine
    garlic powder,salt and pepper to taste
    2 c cherry tomatoes
    2 4 oz cans diced green chilies
    1.5 tsp ground cumin
    1 tsp curry powder
    .5 tsp garlic powder
    2 dashes of hot pepper sauce
    2 c sour cream
    20 flour tortillas
    2.5 C Monterrey Jack cheese shredded
    1.5 C Cheddar cheese shredded

Directions

blend together ingredients 1 thru 6 - this is the filling for the enchiladas. Fill each tortilla with three tbs of filling and roll. Line 2 greased 9 X 13 baking dish. Bled together items 7 thru 14 to make sauce to pour evenly over enchiladas. Cover with foil and bake at 350 for 45 min. Remove foil and cover with cheese and return to oven for 5min or cheese is melted and just browning.
Makes 18-20, 1 enchilada servings
