Ingredients

    2 Oranges peel and pith removed, cut out the segments
    1 Large celery stick with leaves, chopped
    20g pumpkin seeds
    30g chopped walnuts
    150g Lettuce, shredded
    30g capers
    90g chopped green olives
    1 large tomato, chopped
    1 cup onion, chopped

    For the dressing:
    Quarter cup olive oil
    Quarter cup vinegar
    1 tsp wholegrain mustard

Directions

Mix ingredients in a bowl and eat.
