I found this is a healthier alternative to eating out at a chain resturant. I found this is a healthier alternative to eating out at a chain resturant.
Number of Servings: 4

Ingredients

    16 oz boneless, skinless chicken, cubed & cooked with Pam cooking spray
    1 Cup (uncooked) Instant Brown Rice (makes approx 1 1/3 cup cooked rice)
    1 Cup Salsa
    1/2 Cup Fat Free Shredded cheddar cheese
    1 Cup Green Pepper chopped
    1 Cup Red Pepper chopped
    8 Tablespoons Fat Free Sour Cream

Directions

Spray skillet with Pam cooking spray. Cook Chicken until golden brown.
Cooked Instant brown rice per instructions on box.
Divide rice into 4 equal serviings
Divide cooked chicken into 4 equal portions and put on rice.
Add 1/4 cup of Salsa to each
Add 1/8 cup of Fat Free Shredded Cheddar Cheese
Add 1/4 cup Chopped Green Pepper
Add 1/4 cup Chopped Red Pepper
Top with 2 Tablespoons of Fat Free Sour Cream

You can add other veggies that you would prefer but you have to recalculate...
