Introduction

Ingredients

    1 Cup quinoa, dry
    2 Cups water
    6-8 Dried medjool dates, chopped
    1 oz raw almonds, chopped
    1/2 large onion, chopped (I use Walla Wallas)
    3 Cloves garlic, minced
    3/4 C (or to taste) Italian/Flatleaf parsley, chopped
    1 Tbsp Extra Virgin Olive Oil

Directions

Combine quinoa and water in a small saucepan and bring to a boil. Reduce heat and cover, simmering for about 10 mins. Remove from heat and let sit for another 5-10 mins until all the water is absorbed and set aside. While that is cooking, add oil to a large skillet over medium-high heat. When the pan is hot, add onions and garlic and saute until translucent. Add nuts and dates and reduce heat to medium, toasting the nuts and heating the dates through. Remove from heat and add the cooked quinoa, stirring to combine all ingredients. Add parsley and stir. Enjoy!

I eat this 1 Cup at a time as a hearty lunch at school or in 1/2 Cup servings as a side dish.
