Introduction

This pasta salad is actually a very modified version of "Summers Bounty Pasta Salad" from this site. It was different enough though that I thought it worth posting. The fat content is considerably lower. You can definitely adjust the "wetness" of the pasta salad by adding more or less sour cream and mayo. I like mine a little on the dry side. Enjoy! Number of Servings: 12

Ingredients

    16 oz Elbow Macaroni
    1 red bell pepper, chopped
    1 medium onion, chopped
    1 C shredded carrots
    2 C broccoli, steamed "al dente"
    2 10.75 oz can chicken breast (or meat of your choice)
    1 Tbsp dried parsley
    2 tsp dill weed
    2 tsp mustard
    1 Tbsp minced garlic
    2 tsp paprika
    3/4 C Hellman's Low Fat Mayo
    3/4 C Light Sour Cream
    1 Tbsp Extra Virgin Olive Oil
    Salt and pepper to taste

Directions

Chop veggies and in the mean time lightly steam the broccoli just to take away some of the hard crunch.

Mix all ingredients in a large bowl. Enjoy!

Serving Size: Makes about 12 "bulging" 1 C servings
