12 Cups Fresh bite-sized pieces spinach
1 Pint (2 Cups) strawberries, sliced
2/3 Cup sliced green onion
2 Cans (11 ounces each) mandarin orange segments, drained
1/4 cup pine nuts

Orange Honey Dressing
1/4 Cup Orange juice
1/4 Cup honey
2 Tablespoons Olive oil
2 teaspoons Dijon Mustard

Directions

1. Prepare orange honey dressing; put all ingredients in tightly covered container and shake.
2. Toss dressing and remaining ingredients except pine nuts. Sprinkle with pine nuts.

Comment: This is a great salad and if you replace the orange slices with blueberries it makes an awesome summer salad. You can also replace the OJ in the dressing with lime or lemon juice and it tastes great. I love this salad.
