Introduction

Ingredients

    7-8 medium sized tomatoes, peeled, seeded and chopped
    2 garlic cloves, minced
    1/2 cup chopped scallions
    6 basil leaves, minced
    1 tbsp olive oil
    1 tsp balsamic (or red wine) vinegar
    Salt and Pepper to taste

Directions

To make peeling the tomatoes easier, follow this technique: With a knife slit a small "x" at the base of each tomato. Boil some water. Once boiling, add tomatoes for only 1 minute then plunge the tomatoes into iced water. The peeling should slip right off.
Mix all ingredients in a bowl and let sit for at least one hour to allow flavours to develop.
If you are topping bread - slice a baguette to your desired thickness and brush one side with olive oil. Toast in the oven on a cookie sheet, oil side down. Then brush the other side with olive oil. Put in oven (around 350) Once browned on the bottom, take out of oven and rub the top with a half of a garlic clove. Top with bruschetta.
