Introduction

Number of Servings: 20

Ingredients

    3 egg whites
    1/2 tsp cream of tartar
    1/2 cup granulated sugar
    1/2 cup confectionary (powdered) sugar
    1/2 tsp. mint extract
    1/2 tsp. vanilla extract
    1/2 cup chocolate chips

Directions

Makes 20 1.5 inch cookies (at least)

preheat the oven to 350 degrees

Beat the egg whites and the cream of tartar until starting to foam.
Gradually add the sugar and the powdered sugar and continue beating until the egg whites are stiff but not dry.
Add in the mint and vanilla extracts and the chocolate chips, being careful not to deflate the whites as you do this.

Line a baking sheet with parchment or baking paper.
Drop spoonfuls of meringue onto the baking sheet leaving some room between cookies. (they don't expand very much but it makes it much easier to take them off later)

Bake for 10 minutes at 350, then lower the oven to 200 degrees and bake for 20 more minutes without opening the oven door.

Allow to cool completely before removing from pan.
