I've been wanting to try this BBQ sauce for a while and with a pork loin roast in the fridge, I decided to give it a try in my slow cooker.Number of Servings: 15
Ingredients
-
1 pork loin roast about 2-1/2 lbs. (mine weighed 41.35 ounces)
1 bottle of Sensations, Tequila Lime Habanero BBQ sauce(425ml) (or BBQ sauce of your choosing)
3/4 cup unsweetened applesauce
3/4cup dried cranberries
1 large (softball sized) vidalia onion chopped (about 2.5 cups)
1 cup water
Directions
Cut Pork roast into 3/4 inch chops and lightly brown in frying pan. When browning is complete add chops to slow cooker along with BBQ sauce, applesauce and dried cranberries.
Add 1 cup water.
Set temp to high on slow cooker and cook for 3 hours, or low and cook for 6 hours.
When cooker is done, separate meat from sauce, reserving sauce for later.
Using 2 forks, pull apart chopping shredding it.
Add reserved sauce a little at a time to the meat until all sauce has been incorporated.
At this stage you can portion out your shredded pork for sandwiches and use immediately or freeze for later use.
Serve on a nice crusty roll, with veggies and dip for lunches, or over rice and quinoa with veggies for a hearty dinner.
Servings are 5 ounces each, and I got 15 servings from this recipe.
