Introduction

I love Mexican food, especially tacos, buritos, salsas and such. I think this is a good alternative to those canned refried beans tha tare high in fat and sodium that only allow a half cup serving. This makes a generous single serve or can be divided and made into tacos, just add lettuce, tomatoes olives, your favorite toppings and supper is seved. Ingredients

    1/2 cup cooked white rice
    1/2 cup cooked black beans plain no seasoning
    1 inch thick slice of medium onion chopped
    1/8 tsp of ground cumin, chili powder, garlic powder and
    morton lite salt
    cooking spay
    1-2 tbsp of water

Directions

Cook rice and black beans according to package directions. I use dried beans and made from scratch.

In a medium saute' pan, spray pan with cooking sprayl and saute the onion until tender about 3 minutes. Add the rice and beans and saute for 2 minutes, add all ths pices and about 1-2 tbsp of water. Stir until spices are well combined and beans and rice is heated through, about 5 minutes.

Serve as is or divide among 4 low carb tortillas, a 1/4 filling each.

Serving Size: Makes 1 entree serving or can be divided between low carb flour tortillas for tacos
