Introduction

Ingredients

    6 eggs
    1 cup milk
    1/2 cup flour
    1/2 tsp baking power
    Salt - to taste
    Pepper - to taste
    Red pepper - to taste
    1 cup chopped onion
    1 package frozen spinach
    Other veggies that are in your fridge

Directions

Preheat oven to 400 F. Spray a muffin tin with Pam. Saute onion and peppers, set aside. Defrost spinach and put on paper towels to absorb water. In medium mixing bowl add eggs and milk, whisk together. Add baking power, flour, and spices to your liking. Add spinach and sauteed onion and pepper. Mix well. Pour into 12 muffins. Bake 20 - 25 minutes until set.
