Introduction

Ingredients

1 acorn squash, cut in half and seeds removed
2 Tablespoons extra virgin olive oil
1/2 Tablespoon ground cinnamon
Directions
1. Cut squash in half with a sturdy knife or cleaver and remove the seeds and pulp.
2. Place 1/2 of the squash with the cut side up in a 2-quart casserole dish with 1/4 cup water in bottom. Cover and heat on high in the microwave for 8 to 12 minutes. Squash is done when the flesh is tender.
3. Scoop out the flesh and add to a bowl.
4. Repeat for cooking the other half and combine the flesh in the bowl. Crush and mix the squash with a spoon until it is smooth without clumps.
5. Add 2 Tablespoons of olive oil and 1/2 Tablespoon ground cinnamon. Mix thoughly.
6. Serve and enjoy.
