Introduction

An easy dish that can be put over rice or noodles.

*Note* : Yes. The fat content is a bit high, however, I used normal cream cheese instead of low fat in order to have more flavor. Im sure changing this would decrease the amount of fat.

Ingredients

    2 Boneless Skinless Chicken Breasts - Cubed
    2 Tbsp Cream Cheese
    2 Tbsp Olive Oil
    1 Cup Frozen Spinach
    1/4 Cup Nonfat Milk
    1/2 Cup Water
    1 Tsp Minced Garlic

Directions

Pour 1 Tbsp oil into medium high skillet. Cook chicken til done, remove chicken from skillet and set aside. Pour remaining oil, then add spinach and garlic, cooking for one minute. Add Cream Cheese, Milk, and Water to skillet. Cook until cream cheese has turned creamy and thickened into a sauce. Remove from heat, and pour over chicken.

Serving Size: Makes 2 Half-Cup servings

    Very Good
    This was a delicious change of pace. I used 3/4 cup of skim milk and omitted the water. I also cooked up some tricolour couscous
    about 1/2 cup cooked and place that below the chicken and spinach sauce. Did not matter how runny or thin...it was a delicious change of pace. i used LITE cream cheese
