Introduction

Number of Servings: 20

Ingredients

    3 Large Stalks of Celery
    3 Large Carrots
    1 Cup Onion Chopped
    1.46 lbs Turkey-Ground Lean White Meat
    One Package of Vigo White and Wild Rice Mix
    One large head of Cabbage Shredded
    6 Whole White Mushrooms
    20 cups of Water (or more as necessary)
    4 T Margarine
    One third cup white flour mixed with tap water to make a paste.

Directions

Cut up Celery, Carrots and Onion. Add to Large Cooking Pot with the Ground Turkey. Add 5 of the Cups of Water and Cover on High Heat. Stir pot and add Cabbage, Mushrooms, Margarine. Return to a boil and decrease heat. Add rice mix and cover. Fill up pot with water and allow to simmer for about 20 minutes. Finally, add flour paste and reduce heat while stirring to thicken broth. Add seasonings, salt and pepper to taste.

Serving Size: Makes 20 one cup portions
