Ingredients

    1 lb pinquito beans, picked clean to remove any small bits
    1 Strip bacon, diced
    1/2 C ham, diced
    1 clove garlic
    3/4 C tomato puree
    1/4 C red chile sauce (Las Palmas brand, or other similar)
    1 tsp dry mustard
    1Tbsp sugar
    1tsp salt
    1 pinch msg (optional)
    Water (for cooking beans)

Directions

Place beans in 4 qt pot, cover with water, then let sit overnight.
Drain beans, then add 2 qts fresh water, bring to boil, then simmer for 2 hours.
At end of cooking, drain most of the water off beans, reserving some cooking water.
Make sauce by sauteing bacon and ham until lightly brown, then cook for 1-2 minutes longer. Add remaining ingredients, then stir into drained beans.
Cook on stove for 1/2 hour, adding reserved liquid as needed.
