Introduction

Clean version of pumpkin loaf or muffins... The original recipe used splenda, but to keep it clean, I substituted 1/2 cup sucanat instead. It won't be very sweet... You could double the sucanat for only an additional 35 calories per slice. Recipe should make 10-11 slices. Calories based on 11 slices. Clean version of pumpkin loaf or muffins... Ingredients

    1 1/3 c white whole wheat flour
    1/2 cup whole cane sugar (sucanant)
    1 1/4 tsp baking powder
    1/2 tsp baking soda
    2 egg whites
    1 c canned pumpkin
    1 tbsp cinnamon
    Dash of ginger and all spice (to your taste)
    1/5 c or less water (or coffee) just until all is combined
    2 scoops plain unsweetened protein powder
    2 tsp vanilla extract or vanilla bean paste
    1/4 c unsweetened applesauce
    Handful pumpkin seeds

Directions

Mix it all together and sprinkle with a few pumpkin seeds. 350 degrees 50-55 minutes or until toothpick comes out clean.

You can do these as muffins OR in a loaf pan. Watch your cooking times with muffins. I would check them after 30-40 minutes.

Serving Size: Makes 10-11 servings loaf slices or muffins.
