Introduction

Similar to the more well known Tuna Melt, this is a lighter, gluten-free, quick and easy Crab Meat Melt Similar to the more well known Tuna Melt, this is a lighter, gluten-free, quick and easy Crab Meat Melt
Number of Servings: 2

Ingredients

    4.25 oz canned white crab meat (1 can Bumble Bee)
    1 tbsp mayonnaise w/ olive oil
    dash of each to taste, black pepper, curry powder, cayenne or red pepper

    4 slices gluten-free bread
    4 large slices colby jack cheese

Directions

Drain the crab meat and stir together with mayonnaise, pepper and curry.

Toast the bread slices in an electric toaster - about half as dark as normal.

Pre-heat the oven broiler on high, with top rack 2 spots down.

Place slices of toast on a cookie sheet. Divide the crab mixture in 4 and spread on toast. Top each piece of toast with a slice of cheese.

Place the sheet in the oven broiler till cheese just starts to brown on the edges.

Let cool for a few minutes before eating.

Serving Size: Makes 4 open faced melts, 2 servings
