Introduction

Ingredients

    1 Eggplant cubed/diced
    2 cloves garlic
    1 medium onion
    2 cans diced/stewed tomatoes
    2 Zucchini or Squash cubed/diced
    6 cups (16 oz) Whole wheat medium shells
    2 tbs olive oil
    2tbs Herbs de Provence seasoning

Directions

Saute garlic and onion in olive oil until onions are translucent about 5 minutes

Add squash, eggplant, tomatoes and Herb de Provence. Bring to boil, simmer 20 minutes.

While ratatouille simmers, boil pasta per instructions

Add 1 cup Ratatouille to 3/4 cup of Pasta. Top with mozzarella (optional)
