Introduction

Super yummy! Also add 1 tsp. vanilla and 1 tsp. pumpkin pie spice (or a half teaspoon of whatever spice combo you like! I added a full teaspoon of my favourite pumpkin pie spice). Super yummy! Ingredients

    1C whole wheat flour
    2 tsp. baking powder
    1 Tbs brown sugar
    1/2C pumpkin puree
    1C milk (I used almond milk you could use whatever you want)
    1 egg (you might be able to sub this out to make it vegan)
    1 tsp. vanilla
    2 tsp veggie oil
    1/2 to 1tsp of pumpkin pie spice (or your fave spice blend)
    1/2 tsp salt

Directions

Mix the wet ingredients together. Mix the dry ingredients in a separate bowl. Put the two together and stir until blended but it's okay to have some lumps

Serving Size: made 10 but could easily have made 12 pancakes about 2 to 3 inches in diameter
