Ingredients

    100g butter, chopped
    1/2 cup packed brown sugar
    1 cup chopped pitted dates
    1 teaspoon mixed spice
    1 teaspoon bicarb soda
    2 eggs, lightly beaten
    1 1/2 cups self-raising flour
    50g pepitas
    50g sunflower seed kernels
    50g pecans chopped
    1/2 cup grated carrot

Directions

Preheat oven to 180 C. Grease and line loaf tin. Place butter, sugar, dates, spice and 1 cup cold water into medium saucepan, over medium heat. Cook, stirring, for 4 minutes or until butter has melted and sugar has dissolved. Bring to the boil. Remove from heat. Stir in bicarb. Cool for 20 minutes. Stir in eggs, Add flour, seeds, nuts and carrot. Stir to combine. Pour into prepared tin and bake for 50minutes. Cool in pan for 10 minutes. Turn onto wire rack to cool completely.
