Ingredients

2 breast cooked boneless, skinless chicken breast
2 large stalk celery
1/2 medium red onion(s)
2 sprig fresh dill
2 Tbsp Grey Poupon Dijon Mustard
1/2 tsp paprika
2 tsp fresh lemon juice
1/2 tsp lemon zest
2 Tbsp parsley
2 whole hard-boiled egg(s)
1 tsp sea salt
3/4 cup Kraft Light Mayonnaise
Directions
Special Note:
A) The parsley noted in the ingredients list should be ITALIAN PARSLEY - not curly parsley.
B) When buying chicken breast, I purchase the bagged frozen chicken breast (Tyson brand for example). Each piece of meat that comes in those bags are actually 1/2 of a whole chicken breast (sometimes even noted as being "chicken breast halves/splits"). This recipe calls for 2 whole chicken breasts. This means if you are buying "bagged" chicken breast, you will actually use 4 pieces of meat (which is equivalent to 2 whole breasts).
1. Finely chop celery, Italian parsley, red onion and dill. Place in large mixing bowl.
2. Use only the whites of the hard-boiled eggs, chop the whites, and place them in the bowl. Discard the yolks.
3. Grate the lemon rind. Add to bowl.
4. Chop cooked chicken breast into 1/4 inch pieces. Place in bowl.
5. Add remaining ingredients to the bowl and mix well.
Pepper to taste
Serve with butter lettuce leaves, crackers or whatever you would prefer.
OPTIONAL:
Add 1/2 cup of halved red table grapes for a nice sweet crunch.
