Ingredients

1 Cup old fashion oats
1 cup nonfat milk(skim)
1 cup whole wheat flour(1 serv =1/4 cupx4= 1 cup)
1/4 cup splenda brown sugar blend= 12 tsp
1/2 cup unsweetened applesauce
2 egg whites
1 tsp baking powder
1/2 tea salt
1 tsp cinnamon
1 tabl regular splenda(use with cinnamon for the topping)
rasins or nuts optional, I used 1/4 cup walnuts
1 banana smashed
Directions
Soak oats in milk for about 1 hr, Preheat oven to 400, Spry muffin pan with cooking spray, combine the oat mixture with the egg whites, applesauce, and banana, mix till combined
In a seperate bowl mix dry ingredients
Add wet ingredients to dry just till combined, add nuts, DONOT overmix, or the muffins will be tough, spoon into muffin pan.
Combine Cinnamon and the splenda and top each muffin with the mixture.
Bake at 400 for 20-25 min.
Remove, cool.Enjoy
These can easily be put into freezer and reheated for a wonderful snack or breakfast!
