Introduction
My mother in law made this one night for dinner. I was a little worried because I have never been a big fan of tuna. But it was amazing! She used more cheese, but for calories/fat I decided to cut it in half. You can pretty much replace the peas with any veggie. I have used green beans before and it was still yummy. Ingredients

2 cans of tuna in water, drained
4 small potatoes, peeled and washed
1 can cream of mushroom or cream of chicken
1 cup frozen peas
1/4 cup finely chopped onion,
1 cup of shredded cheese
S&P to taste
Directions
Preheat oven to 350
Boil potatoes until done. Place in mixing bowl with 1 tbs butter and can of cream of mushroom soup. Mix until mashed. Add 1 cup pea, 2 cans tuna (drain first), 1/4 cup chopped onions, S&P for taste. Bake in oven 10 min. Top with 1 cup of cheese and bake for another 10-15min.
Serving Size: serves 4
