Ingredients

    Matchmeat - I used mostly sweet Italian sausage flavor with some ground beef - I used one package
    Carrots, celery, onion - chop in food processor to get really small pieces - texture feels like more beef
    2 cloves garlic
    Mushrooms - again chopped in food processor small
    1 can black beans - didn't rinse
    1 can chili beans
    2 can Rotel
    1 can diced tomatos
    Chili powder to taste
    cumin to taste
    chipotle cube

    Optional toppings/ addins
    Heavy cream
    Cottage cheese
    Reduced fat cheddar

Directions

Brown matchmeat, saute veggies in olive oil - add rest and simmer. I rinse the cans with some water to thin the chili. I also added water while browning the matchmeat - it was sticking to my cast iron skillet and again it would just thin the chili - I like a little juice.

At the end I added a little heavy cream because I had it and it just adds a little smoothness to chili
