I threw together these ingredients to make a delicious vegetable medley. I threw together these ingredients to make a delicious vegetable medley.

Ingredients

    1 summer squash cooked and forked (shredded)
    1 zucchini - shredded
    2 tomatoes diced
    1/ 2 red bell pepper chopped
    1/2 cup grated carrots
    4 TBSP sun dried tomatoes
    1 cup spinach
    1 TBSP chopped garlic
    1 tsp black pepper
    1/2 TBSP dried onion flakes

Directions

cook spaghetti squash by cutting in half and microwaving for 15 minutes. Let cool and then use fork to shred like spaghetti noodles. In wok or pan combine all other ingredients until incorporated and heated through.
