Ingredients

    Cauliflower, raw, 3 cup
    Garlic, 6 cloves
    Milk, canned, evaporated, nonfat, 2 tbs

    Ground beef, extra lean, 16 oz
    Onions, raw, 1 medium (2-1/2" dia)
    Mushrooms, fresh, 8 small
    Celery, raw, 1 cup, diced
    Carrots, raw, 1 cup, chopped
    *BBQ Sauce, Light, .5 cup
    part skim shredded cheese, 1 cup

Directions

Steam cauliflower and garlic together until cauliflower is very soft. Cool slighly then whip in food processor with 2 tbsp evaporated milk. Salt & Pepper to taste.

In a large saucepan, brown beef until not quite cooked through and then add all of the veggies. Cook until onion is tender and add bbq sauce. Simmer 2 minutes.

Spray a casserole dish. Put in the beef veggie mix and then top with whipped cauliflower. Bake at 350 for 25-30 minutes. Sprinkle shredded cheese on top and bake an additional 5-10 minutes until the cheese is bubbley.

Serving Size: Makes 4 generous servings.
