Ingredients

3 lb Pork, fresh, loin, blade (chops or roasts), bone-in, about 6 chops
3 med Onions, raw
2 tbs Canola Oil
1 can Swanson Chicken Broth 99% Fat Free
3 cans Tomatoes, S&W Ready-cut diced tomatoes
3 tbs Juice - Real Lemon, Lemon Juice
1.5 tsp salt
2 cloves Garlic, 2 clove (remove)
3 tsp Mustard, Dry
Directions
mix salt, mustard, lemon juice
coat both sides of chops lightly with the mixture and marinate
all of the lemon-mustard mixture must be added in later
cook chopped onions in the chicken broth.
When broth cooks away, set onions aside
brown chops on both sides, set chops aside
replace onions in pan, add oil and garlic, saute 5 min
add 3 cans tomatoes
scape *all* remnants of lemon-mustard marinade mixture into the pan
bring to a rapid simmer
replace chops into the pan, cover and simmer 30 min
serve 1/2 chop and about 3/4 cup sauce over whole wheat spaetzle
