Ingredients

1/2 lb. Boned Chicken Breasts, cut up into pieces
2 Tbsp. Butter or margarine
12 oz. Polish Sausage (Kielbase), sliced
1 Small Green pepper, diced
1 Small Onion, diced
1 Stalk, Celery, diced
1 Can (14.5 oz) Stewed Tomatoes
1/2 cup water
1 1/2 cups Minute Rice
1/2 tsp. salt
1/2 tsp. Hot pepper sauce
1 Tbsp. chopped parsley (optional)
Directions
1. Cook and stir chicken in hot butter in a large skillet until lightly browned.
2. Add sausage, green pepper, onion, and celery; cook until vegetables are just tender. About 5 minutes.
3. Mix tomatoes and water; bring to a full boil.
4. Stir in rice, salt, and hot pepper sauce. Cover and remove from heat. Let stand 5 minutes. Fluff with fork. And sprinkle with parsley.
Serving Size: 6-8 cups
