Ingredients

1 cup brown rice (enough to make 5 half cup servings cooked)
2 1/2 cups fat free, reduced sodium chicken broth (or broth as directed to cook your rice on package)
1/2 cup finely chopped onion
1/2 cup finely diced carrot
1 cup thinly sliced mushrooms
1/2 cup petite peas, frozen
1 tbsp. light butter
1/4 cup finely minced fresh parsley
1/2 tsp. salt
1 tsp whit pepper
1/2 tsp paprika
1/2 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
Directions
Heat large frying pan and melt light butter in it. Add mushrooms and saute until soft, about 3 minutes. Add onions and carrots to the pan and saute another 3 minutes. Add the rice and broth to the pan and bring the mixture to a boil.Cover the pan and reduce the heat to simmer. Cook rice for 30 minutes, after 30 minutes, add the peas and spices. Stir completely, and bring back to a boil. Cover the mixture and cook another 10 minutes, or until the rice is light and fluffy and the liquid is absorbed. Fluff the rice and serve hot.
