Ingredients

Wraps:
8-10 whole cabbage leaves
1 lb. lean ground grass fed beef
1/2 red onion, sliced
1 red bell pepper cut into strips
1.5 oz peanuts (crushed)
Fresh cilantro (optional)
Diced cucumber (optional)
Sauce:
1/4 c. soy sauce or tamari
2 tblsp. honey
1 tsp. grated ginger (or ground ginger if you can't get fresh)
2 cloves of garlic (minced)
1 serrano chile, chopped fine
2 tblsp. orange juice
juice of 1/2 a lime (~1 1/2 tblsp.)
Directions
Begin by trimming the stem off of a head of cabbage and carefully tearing off whole leaves.
In a skillet, heat a bit of sesame or peanut oil and then brown the ground beef, seasoning with salt and pepper to taste, then add the sliced peppers and onions. Reduce heat to medium and cook until tender while you mix up the sauce.
In a bowl, combine the sauce ingredients and mix well, then add to the meat mixture along with the crushed peanuts. Mix until well combined, simmer for 5 minutes to get the flavors blended, then serve by scooping meat into a cabbage leaf and topping with fresh cilantro and / or diced cucumber
