Introduction

My momma always used a can of gumbo to make her sloppy joes, and I can't seem to find a good turkey sloppy joe recipe using gumbo, so this is my take on "healthy" sloppy joes. Ingredients

    20 oz extra lean Jennie-O ground turkey (97/3)
    1 can Campbell's Light condensed chicken gumbo soup
    1 medium onion, chopped
    2 Tbsp ketchup
    1 tsp horseradish mustard

Directions

Brown onion and ground turkey and drain. Add green pepper, ketchup, mustard, and chicken gumbo soup. Simmer until the mixture reaches the consistency you like.
I like to toss in a little red pepper to spice it up a bit. YUM!

Serve on hamburger buns (not included in nutrition info).

Serving Size: Makes 7 1/2 cup servings.
