Introduction

This Soup is a staple in my life. It is delicious and filling and can be eaten when ever you get hungry. This Soup is a staple in my life. It is delicious and filling and can be eaten when ever you get hungry.
Number of Servings: 15

Ingredients

    1 Package of dried Lentils( it doesn't matter what kind)
    4 Lrg Stalks of Celery Diced (small cubes)
    3 Med Carrots Diced (small cubes)
    2 Tbs minced Garlic.. Jarred is fine
    1 Med Sweet Onion
    7- 14.5 oz cans of FF low sodium Chicken Stock
    1/2 Cup Chopped Fresh Parsley
    2 Tbs Fresh Thyme
    2 tsp Cumin
    1/12 Tlb Curry Powder
    Sea Salt
    Cracked Pepper
    2 Tbs Olive Oil
    2 Tbs BBQ Sauce

Directions

Add the Olive oil to a large 5 quart pot and heat on med high. Add first 5 ingredients, Curry and Cumin and saute for about 5 mins until you see the Lentils swelling.. Add Chicken Stock 1/2 of your parsley and bring to a boil. Salt and pepper to taste. When you are almost done you will add the BBQ Sauce and the rest of your Parsley.. Once the Lentils are tender your soup is done..

Serving Size: This makes about 15 -1 Cup servings
