Introduction

This is a simple, delicious and nutritious breakfast or snack. Season to taste. I sprinkle a mix of equal parts cayenne pepper and ginger for extra heat and flavour, and to rev up the metabolism for the day. This is a simple, delicious and nutritious breakfast or snack. Ingredients

    2 medium eggs
    c.50g soft goat's cheese
    4 - 6 medium mushrooms
    Fresh chives, chopped
    Freshly ground black pepper
    Ground ginger, optional
    Cayenne pepper, optional

Directions

Chop mushrooms an mix and sauté over a medium heat in butter or oil (or spray of oil). Add beaten eggs and stir through vigorously so that they scramble. Chop and add chives, grind black pepper over the mix and other spices if desired. Take off the heat and stir in the goat's cheese. Serve, either as is or on a piece of wholemeal toast.
