Introduction

Ingredients

1/2c Egg Substitue
1/4c Skim Ricotta
2tbs Fat-free Sour Cream
1/2c Flax Seed Meal
1tsp Baking Powder
1 pkt Splenda
1tsp Vanilla Extract
Add a dash of Cinammon if you like
Directions
Preheat skillet on low heat.
In medium bowl, combine wet ingredients: egg, ricotta, and sour cream until smooth. Add remaining dry ingredients to mixture until well blended
Small size pancakes are recommended. If they get too big they are harder to flip as the don't firm up easily as regular pancakes.
Increase heat from low to medium. Use non-stick spray or small amount of allowed butter to pan.
Does not bubble quite the same as regular pancakes to know when to flip and they do take a bit longer to cook.
Top with sugar-free syrup! Yum.
