Ingredients

    6 T rice wine vinegar
    3 T sesame oil
    5 T reduced fat creamy peanut butter
    3 T soy sauce
    3 T brown sugar
    1 T minced ginger root
    1 t. minced garlic
    10 c shredded cabbage (green, red and/or napa)
    1 red bell pepper sliced into 1" pieces
    2 carrots sliced into 1" pieces
    6 green onions, chopped
    .5 c slivered almonds

Directions

Combine all dressing ingredients. In a separate bowl, combine the cabbage and vegetables. Just before serving, pour the dressing over the vegetable mixture, then stir in the almonds.
