Ingredients

2 large eggs
1/2 c. egg whites
5 oz can of evaporated milk
2 tsp dijon mustard
1/2 tsp salt
1/4 tsp black pepper
1 tsp olive oil
8 oz asparagus
3 tbsp water
1 (6 oz) ham
1/4 tsp tarragon
3 oz part skim swiss grated
Directions
pre-heat oven to 400 degrees
grease 9 inch pyrex pie plate
Place asparagus in a large skillet with the 3 tbsp water and w/ the 1 tsp of oil until tender (3-4 minutes). Add ham and saute until browned (2-3 minutes longer).
In a seperate dish whisk eggs, milk, mustard, salt & pepper. Stir in tarragon, cheese, ham and asparagus.
Pour mixture into pie plate and bake until just set, 25 to 30 minutes. Remove from oven and let rest. Cut into 6 wedges and serve.
Serving Size: 1/6th of the quiche = one serving
