A simple carrot soup with a hint of spice, perfect as the centerpiece of a light dinner after too much winter-time indulgence. This recipe makes three servings, and is a great, easy meal for one or two, but you could easily double or triple the recipe to feed more. Ingredients

3 large carrots, peeled and chopped
2 tsp. ginger
1 tsp. cinnamon
1 tsp. cumin (ground)
1.5 tbsp. tahini (sesame paste)
Directions
3 servings.
Place the carrots in a small soup pot and add enough water to cover the carrots plus an additional two inches. Over high heat, bring the carrots to a rapid boil, adding more water if needed. Add the ginger, cinnamon and cumin. When the carrots are soft, remove fom heat and transfer them to a blender or food processor with the cooking liquid and an additional 2 cups of water. Blend until smooth. Ladle into three bowls, and drizzle the top of each with half a tablespoon of tahini.
