Ingredients

    1 lb pasta
    14 oz pkg Italian style sausage, sliced
    1 T olive oil
    1 shallot chopped
    2 cl garlic, chopped
    3 T sherry or red wine vinegar
    2 bunches broccoli rabe, trimmed and chopped
    Salt
    Pepper
    ½ c parmesan grated

Directions

Cook pasta to pkg directions. Meanwhile, in large frying pan, over med high heat, brown sausage, about 5 min. Add shallot and garlic and cook until fragrant, about 1 min. Pour in vinegar and scrape pan bottom to deglaze. Add broccoli rabe and sprinkle with salt and pepper to taste. Cook, covered, until tender crisp, about 2 min. Drain pasta, reserving ½ c cooking liquid. Return pasta to pot and combine with sausage mixture. Add reserved liquid if pasta seems dry. Stir in grated parmesan.
