Ingredients

1-4 oz chicken breast
2 cups of fresh spinach
1 tbsp chopped red onion
1/2 chopped red pepper
1 garlic clove, minced
1/2 tbsp extra virgin olive oil
1 anchovy filet
1 oz crumbled low fat feta cheese
Directions
1. Butterfly the chicken breast and pound it out thin to make a large open surface.
2. Saute the garlic, onion, red pepper, and anchovy in the oil until peppers are tender and the onions are translucent.
3. Add the spinach to the peppers and onions and wilt until completely cooked down. Salt and pepper the mixture, to taste.
4. Spread the spinach mixture over the chicken in a thin layer. Then spread the feta over the spinach in the thin layer. Roll the chicken up, so that it looks like a pinwheel.
5. Using the same pan that you sauteed your vegetables in, sear the outside of the chicken, until golden brown, searing the crease first to seal the rolade.
6. Finish chicken in a 400 degree oven. Bakes for about 15 minutes, or until the internal temperature reaches 165 degrees.
