Introduction

I tried to make these a little more healthy than the original recipe by using coconut milk and some white whole wheat. They had to pass the kid test and they did with flying colors. Ingredients

    1 cup so delicious coconut milk sugar free
    1/4 cup canola oil
    1/2 tsp vanilla
    1 egg
    1 cup white whole wheat flour
    1 cup white flour
    1/3 cup sugar
    3 teaspoons baking powder
    1/2 teaspoon salt
    1 cup fresh cranberries cut in half
    1 Tablespoon orange peel
    1 tsp granulated sugar

Directions

Mix coconut milk, oil, vanilla, egg and orange peel. Stir in flour, sugar, baking powder and salt. Fold in cranberries. Sprinkle the top of each muffin with a little bit of the teaspoon of granulated sugar. Bake at 400 degrees for 20-25 minutes until golden brown. Cool and enjoy!
