Introduction

Ingredients

3 large potatoes peeled and sliced 1/4 inch
1 can Cream of Celery Soup
1/2 cup light sour cream
1/4 cup milk
1 tsp dry minced onion
1 Tbs dry parsley flakes
1/2 cup shredded cheddar cheese
salt and pepper
Directions
Put sliced potatoes in large skillet and cover with cold water and 2 tsp. salt. Bring to a boil, lower heat and simmer about 10 minutes or until potato slices are tender.
Drain potatoes.
Mix soup, sour cream, milk, minced onion and and add to potatoes in skillet. Cover and cook on low heat until bubbly and heated through. Add salt and pepper to taste.
Transfer potatoes to a serving dish and top with cheddar cheese. Garnish with paprika and parsley if desired.
